Grilled Red Potatoes

These potatoes are my go-to easy side when I want to BBQ something. Once everything is in the foil packet, the process is really simple, and they turn out consistently yummy. Also, these can cook alongside your other food. Just make sure that the lid is closed as much as possible so you maintain about 350-400 degrees fahrenheit for proper roasting.

  1. Light the grill and allow it time to preheat
  2. Chop the potatoes into quarters, or about 1-inch pieces
  3. Lightly coat the potatoes in oil
  4. Dice the herbs, if they are fresh
  5. Season the potatoes to taste
  6. Make a foil packet for the potatoes and seal them up tightly
  7. Grill over indirect heat with a closed lid for 20 minutes. Ideally, the grill will stay at least 350 degrees fahrenheit throughout.
  8. Shake the foil packet to mix the potatoes and ensure even cooking. Continue grilling over indirect heat for 20 more minutes.
  9. Move the foil packet over direct heat and brown the potatoes with an open lid for 3-5 minutes. The exact time will depend on how brave you are and if you smell burning.
