Needs
- bbq grill -- Gas or charcoal
- salt and pepper
- red potatoes -- About one largish potato per person
- olive oil
- rosemary
- thyme
- dill
- basil
Preparation
- Light the grill and allow it time to preheat
- Chop the potatoes into quarters, or about 1-inch pieces
- Lightly coat the potatoes in oil
- Dice the herbs, if they are fresh
- Season the potatoes to taste
- Make a foil packet for the potatoes and seal them up tightly
- Grill over indirect heat with a closed lid for 20 minutes. Ideally, the grill will stay at least 350 degrees fahrenheit throughout.
- Shake the foil packet to mix the potatoes and ensure even cooking. Continue grilling over indirect heat for 20 more minutes.
- Move the foil packet over direct heat and brown the potatoes with an open lid for 3-5 minutes. The exact time will depend on how brave you are and if you smell burning.
