## Walnut-olive spread and Broccoli Hoagies ### Ingredients - 1 C walnuts - 1/2 C kalamata olives - 2 T capers - 2 cloves garlic, minced - 1/2 C Parmesan cheese - 3 heads of broccoli, broken up into florets. ### Directions 1. Toast walnuts, then mash them or put them through a food processor. 2. Chop up olives and capers, combine with walnut mash, minced garlic, and Parmesan cheese. 3. Briefly broil chopped broccoli florets, until some slight char forms. Remove from broiler. 4. Spread walnut/olive mixture on half a split hoagie roll; toast both halves. 5. Mix together olive oil and balsalmic vinegar, stir to coat broccoli. 6. Add broccoli to sandwich. Serve.
