- solids
- 4-5 cloves of garlic, small bits
- 1 yellow onion
- 1 red onion
- 1 cup dry soy curls
- like 5 small red potatoes
- cilantro, like half a bunch
- a jalapeño pepper
- a bell pepper
- tortillas
- liquids
- 1 tbs olive oil
- ¼ cup soy sauce
- ½ cup lime juice
- ½ cup orange juice
- spices yo
- 2 tbsp cumin
- 1 tbsp chipotle chili powder
- 1 tbsp chili powder
- 1 tbsp paprika, preferably smoked
- 1 tsp cayenne
- some black pepper
- some salt

- prep potatos
- heat up some salted water
- cut off eyes
- scrub off dirt and stuff
- cut into 1 inch cubes
- toss into water once it's boiling
- cook for 15 minutes
- set aside
- prep the soy curls
- pour over hot water (boiling or near boiling)
- let sit 5 minutes
- press out the water. this is really important; you won't be able to sear the curls correctly otherwise
- toast the tortillas over something hot and set aside
- prep garlic, onion, bell pepper, jalapeño, cilantro
- heat up oil in a skillet with the onions
- cook until a little bit of browning
- add in both kinds of pepper and the garlic, cook until that stuff is a little brown
- toss in like a third of the spices and cook for 30 seconds
- deglaze with a splash of soy sauce
- add the soy curls
- add another third of the spices, toss and cook 30 seconds
- deglaze with the orange and lime juices
- cook for a few minutes then add potatos
- get everything seared, deglazing with whatever soy sauce is left
- (bonus: if you want, toss in some salsa you really like)
- toss in the cilantro and some more lime juice
- serve up with your preferred hot sauce and more salsa if you wannit
